My wife and I are returning to Belize next month. We are renting a car and driving to SI for a short stay. What are some fun things to do during our stay? We enjoy a good meal and a few drinks at night, younger couple ,no kids. We won't be there on a Saturday, but is the market still open or some what active?

Went to 2 or 3 ruins all within 10 minutes and hiked up and around them. Went to the market on Wednesday, kayaked down the Mopan river super fun but we brought our own kayak just fyi.
We also rented a car but parked it on the Belize side and walked into Guatamala, what a mistake, it was disgusting. If you want to buy a Hanna Montana blanket or find a prostitute go for it. Have fun! Caracol combined with the pools and cave is a nice day trip.
